What is it?

Saffron comes from a purple crocus flower. Each flower has just three red threads. People pick them by hand, one flower at a time.

It takes lots and lots of flowers to make a little saffron. That is why it costs so much! In Morocco, saffron grows near the town of Taliouine.

How people use it

In the kitchen

Grow it yourself

  1. In late summer, plant saffron bulbs in a sunny pot.
  2. Put them about a hand deep in soil that drains well.
  3. Water a little. Too much water makes the bulbs rot.
  4. In autumn, pick the three red threads from each flower and dry them.

Calm & worry 🟡 Some evidence (small human studies) A 2020 meta-analysis of 12 trials found saffron improved mild to moderate depression more than placebo and about as well as antidepressants, with no difference in side effects[2]. A 2025 meta-analysis of trials comparing saffron with SSRIs found no significant difference for depression or anxiety, and fewer adverse events with saffron; larger studies are needed[1]. Depression needs a doctor's care — do not stop prescribed medicine.
